Many RV enthusiasts enjoy the three-day Memorial Weekend at the campground exploring the great outdoors and enjoying delicious grilled meals with friends and family. This full Memorial Weekend cookout menu is guaranteed to have all of your guests asking for seconds and thirds.
Grilled Jalapeno Chicken
What you’ll need:
- 6 boneless, skinless chicken breast halves (pounded to 1/4-inch thickness)
- 3 fresh jalapenos (halved lengthwise and seeded)
- 1 bottle Italian dressing (16 ounces)
- 1 package softened cream cheese (3 ounces)
- 6 slices bacon
- toothpicks
Cooking instructions:
- Place chicken breasts in a large dish. Pour entire bottle of Italian dressing on top, then cover and marinate for two hours.
- Preheat grill for high heat.
- Stuff jalapeno halves with cream cheese.
- Roll chicken breasts around the stuffed jalapenos, then wrap each breast with a piece of bacon.
- Secure the bacon with a toothpick.
- Oil the grill grate, then cook your chicken breasts for roughly 20 minutes (turning frequently) or until juices run clear.
Grilled Pineapple Rings
What you’ll need:
- 1 fresh pineapple (peeled, cored and cut into rings about 1-inch thick)
- 1 dash hot pepper sauce
- 3 tablespoons melted butter
- 1/4 teaspoon honey
- salt to taste
Cooking instructions:
- Place pineapple rings in a large Ziploc plastic bag.
- Add pepper sauce, butter, honey and salt to the bag, then seal and shake to coat the rings. Let the rings marinate for 30 minutes.
- Preheat grill for high heat and oil the grate lightly.
- Grill pineapple rings for about 2 to 3 minutes on each side.
Summer Strawberry Pie
What you’ll need:
- 1 pie crust (baked)
- 1 cup white sugar
- 3 tablespoons corn starch
- 1 quart fresh strawberries
- 3/4 cup water
Cooking instructions:
- Arrange half of the strawberries in the pie crust.
- Mash the rest of the berries and place them in a medium saucepan with the sugar. Bring them to a boil, stirring frequently.
- In a separate bowl, whisk the cornstarch and water together. Slowly stir the mixture into the boiling strawberries.
- Reduce the heat and simmer the berries until thickened (about 10 minutes). Stir constantly.
- Pour the mixture over the strawberries in the pie crust.
- Chill the pie for several hours and serve with whipped cream if desired.
